I was quite curious about Shibasaki Ramen because I heard it’s a direct branch from Japan. I wanted to highlight their Shio Niboshi Ramen and yes, it was really delicious! You don’t often hear about a ramen with a shiodare-based soup blended with katsuo dashi and topped with yuzu foam. The flavors were perfectly balanced (I even finished every last sip!) What makes this ramen even more unique is that it comes with fried enoki mushrooms and duck confit instead of the usual toppings. Before serving, the staff asked about my noodle preference and suggested not to go for overcooked noodles, which turned out to be the right call. Just a heads up the broth is extremely hot when it arrives, but the staff will warn you about that. Service was also great; they’ll explain the taste and ingredients nicely. I also tried the Japanese Shoyu Ramen, which had a rich soy-based broth. Again, the twist here was the duck confit topping, which is not common in most ramen shops. We even ended up ordering extra duck confit because it was that good!
The shio neboshi ramen was pretty good. The yuzu foam was interesting and gave a slight tang to the dish, but was quickly overpowered by the broth. The clear broth itself was flavorful yet light and smooth, with a somewhat smokey taste. Duck breast confit wasn’t too tender but still okay. Portion’s not too big, enough to satiate hunger but not very filling.
First time here in Yashinoki Yokocho, a Japanese style foodcourt. Craving for a ramen so I go for Shibasakitei ramen stall. Ordered their Shio Niboshi ramen which is topped with duck breast confit, mushrooms and yuzu foad which is unique. The soup base consists of seafood and sardines oil. Very clear and comforting. Shibasaki Ramen is originally Shibasakitei which came from Shibasaki, Tokyo. It is very famous for its style of ramen and soba in Tokyo. I’m happy to meet Shibasaki Ramen in Jakarta, so hurry to come here. I tried Shio Niboshi Ramen. Noodle is pretty arranged in the bowl and texture is so good. Soup is like a kastuo base and clear type. Toppings are 2 pieces of duck breast charsiew, fried enoki, marinated oyster mushrooms. Highlight of presentation is lemon foam, which has foamy lemon flavor and its looking so beautiful However, this style of ramen might depend on each person’s preference. Someone likes it so much, but others are not satisfied considering the price (99k). I’m definitely satisfied with Shibasaki Ramen. Thanks for coming to Jakarta. p.s) Shibasaki Ramen is located in Japan dining street 4th floor just beside XXI Cinema. As mentioned by other reviewers, it’s too hot inside to eat hot ramen. Need to improve.
Easily one of the best ramen in Jakarta. The soup is very light in texture but very bold in flavour. The toppings has been selected very well to accompany the noodles and the broth. Maybe one input, is to nail the cook on the noodle a bit more as I felt when I ordered hard, the noodles were slightly not hard enough.
Ok to be honest a little bit surprised, it’s that good. I ordered Shio Niboshi Ramen, sooo rich in flavour, they have shiodare base, shiso, sardine oil, and YUZU FOAM?? That added another depth. Not to mention the duck confit……. Wow. Will come back, turns out they’re a branch from Japan! Come here if you like authentic Ramen taste - to be honest it’s quite affordable considering the ingredients inside.
Tried a ramen place that truly stood out. Their shio niboshi ramen with yuzu foam was such a unique twist! The duck was tender, and the light citrusy foam added a refreshing layer that elevated the flavor~ The place itself felt cozy, perfect for slow conversations over a warm bowl. Their hojicha was also surprisingly rich and well-balanced, with that roasted aroma that lingers just right. Definitely a spot worth revisiting if you’re looking for something different from your usual ramen bowl.
